Ideas for Mini Sandwiches

 My Executive chef asked me for new ideas on making sandwiches. I then got creative and started working on it. Here are my fresh ideas for mini sandwiches. The bread I used for each of the sandwiches is sundried tomato ciabatta. Each filling is different per sandwich. The first sandwich is filled with mega cream cheese and orange berry sauce. It is garnished with micro herb and raspberry. The second sandwich is filled with labneh cucumber cream and topped off with fish roe. The third sandwich is filled with mega cream cheese, drizzled with orange berry sauce, and garnished with raspberry with flower. Lastly, the fourth sandwich is filled with labneh cucumber cream and then topped off with fish roe and red radish. Then it is garnished with dill leaves.

Savory Canapés

We tend to have sudden orders in the kitchen. With that, our time for preparations is shorter than usual. So, on rush orders, we rely on the dishes that are within time-bound but still quality efficient to serve for our customers. For canapes, the easiest ones to make on a rush order are Bolognese with Parmesan on Tart, Ratatouille with Halloumi Cheese Tart, and Beetroot Cream Cheese and Strawberry Tortilla Wrapped. These three dishes fit not just the time budget but also maintaining a high quality on our menu during rush orders. Burrata and Parma Ham Salad

 Here is my take on Burrata and Parma Ham Salad. This recipe uses simple ingredients, a perfect idea of a wonderful appetizer.  Similar to mozzarella, burrata is made from stretched mozzarella and cream cheese. It is formed into a pocket where the outer surface is solid cheese and the inside is filled with a softer cheese called stracciatella, a mixture of mozzarella and cream.  On the other hand, Parma ham is an Italian cured ham produced specifically in the Parma region of Italy. It is a ham dry-cured for a minimum of 12 months then thinly sliced and served.
