Egg Tomato Croissant

We have here the egg tomato croissant. Associated with this, it also has lolobianco, chives, red onion, capers, white sugar, mayonnaise, salt and pepper. 

Here’s a list for the specific ingredients:

20g                                                 Lolobianco
10ml                                               Lemon juice
5g                                                   Chopped chives
8g                                                   Red Onion chopped 
10g                                                 Capers
20g                                                 Sugar white
50g                                                 Mayonnaise 
2g                                                   Salt
1g                                                   Black pepper

Procedure :

1. Bring a bowl and put the mayonnaise, lemon juice, chopped chives, red onion, capers and sugar. Add salt and pepper to taste.  Mix the ingredients gently with  rubber spatula.
2. Boil the eggs within 8 to 10 minutes.  Once it's cooked, peel off the shell and then grate.   
3. Now, add the dressing to grated eggs and mix gently. 

To Assemble the sandwich:

1. Use bread knife to slice the croissant. Slice lengthwise through the side of it and open.
2. Spread the croissant with Sweet and Sour Mayonnaise.  Arrange the lolobianco in the bottom of the croissant.
3. Add tomato slices and arrange it nicely. On top of the tomato, add  pickled Apple Red cabbage.
4. Lastly, Add the egg mixture.

                             


Chicken Avocado Sandwich

Take a bite with my chicken avocado sandwich. With Ciabatta bread as my foundation, I've also included sliced grilled chicken, avocado, lemon juice, tomato, coriander, olive oil, salt, black pepper, jalapeno and mayonnaise.

Here is the full details for the ingredients.

30g                                                 Diced tomato
2g                                                   Chopped coriander
5ml                                                 Olive oil
5g                                                    Salt
5g                                                    Black pepper
50g                                                  Diced jalapeño 
45g                                                  Mayonnaise

Procedure:

Cooking the Chicken

1.  In a big bowl, marinate the chicken breast with garlic, rosemary leaves, and lemon juice.  Season with salt and pepper.  keep the marinated chicken in the chiller for 24hours to get the best taste of chicken breast.
2. Before roasting the chicken, transfer the marinated chicken and arrange nicely in a flat tray with baking paper. Pre-heat the oven to 200 degree Celsius.  Cook the chicken for 20 to 25 minutes .  Check the chicken after removing from the oven to make sure the chicken is well cooked.  Use the thermometer probe to get the proper doneness of the meat. Insert the thermometer into the thickest part of the meat.
3. Once the chicken breast is cooked.  Transfer the cooked chicken in a flat tray to cool it quickly.  
4. Thinly slice the chicken and add mayonnaise.  Season with salt and pepper to taste.

For Guacamole 

1. Place an avocado in a plastic bowl.  Mash it with fork or potato masher or use whatever you have.
2. Add the mashed avocado with tomato cubes, coriander, white onion, cumin powder, lemon juice and olive oil. Season with salt and pepper.  Lastly, mix the guacamole gently.

To Assemble the Sandwich

1. Bring one ciabatta bread.  Use the serrated knife or bread knife to cut the ciabatta.  Spread the ciabatta with mayonnaise on both inner side (bottom and upper bread).
2.  Mix the roasted chicken slices with mayonnaise.  Arrange nicely on the ciabatta.
3. Add guacamole on top of the chicken mixture. 

For Sandwich Presentation

    Cut the brown Kraft paper food wraps into 1" lengthwise.  Place it in the center of the bread and roll over the body of it. Tie a knot in a ribbon style to make the sandwich more presentable. As shown below picture.
